Madeleines

The madeleine is a traditional small French cake, product from the Lorraine region in the northeastern France.



The madeleines are small sponge cakes, but somewhat lighter, with a distinctive shell-like shape baked in a distinctive shell-shaped molds tray.

You can find these specific madeleines molds tray in stores specialising in kitchen equipments. Aside from these molds, no special tools are required to make madeleines.
I would suggest to buy these molds in silicon, so it is easier to just pop the madeleines out of their molds.
