Crottin de Chavignol (Goat Cheese)

Crottin de Chavignol is a traditional and famous French goat cheese, product from the village of Chavignol in the Loire region of France. It has been produced there since the 16th Century.

Crottin de Chavignol is made from whole goats milk, moulded in small molds with little holes, then taken out after 12 to 24 hours. It is then salted, dried, and turned over regularly which gives it its specific roundish shape, it has then to be ripened for at least 10 days.

The flavor of the crottin de Chavignol has a light goat cheese's taste, is slightly nutty, and is even chalky on the inside. The more you wait to eat it, the more its color becomes darker (blue-ish) and its taste becomes richer and stronger.

It is protected by the AOC seal, which means it has to be created with traditional methods from local (area around Chavignol) goat's milk.
