Comté Cheese

Comté cheese is a French cheese from the France-Comté region located in eastern France. It is very popular in France and easy enough to find overseas, more than 50,000 tons of Comté are made each year in France.

It is made from unpasteurized cow's cheese.

The aging time for Comté cheese is 8 to 12 months.

Comté can be cut in small cubes used as appetizers, or grilled on small tartlets in salads, instead of swiss cheese or cheddar cheese on gratins dishes ... or just served on the cheese board as a simple cheese with some bread.

According to the Comté website, "there are no less than 83 flavours that can be encountered when tasting Comté. As you can see on the wheel [below], we've made recognising them as easy as possible by grouping them into six aromatic families: milk, fruit, roasted, plant, animal and spice."
